Portobello burger for a healthy dinner

Portobello Burger Ingredients (4 servings)
- 4 medium portabella mushrooms, stems removed
- 1 medium onion, cut into 12 inch slices
- 2 tablespoons olive oil
- ¾ teaspoon salt, divided
- ½ teaspoon ground black pepper, divided
- 1 avocado, cut into slices
- Half a teaspoon minced garlic
- 4 whole-wheat muffins or whole-wheat English muffins, lightly toasted
- 4 grated roasted red peppers
to prepare:
- Mix mushrooms and onion slices with oil. Sprinkle ½ teaspoon salt and ½ teaspoon pepper.
- Heat a large skillet over medium heat until hot. Add mushrooms and cook until soft, 8-10 minutes, stirring once. add mushrooms to the dish, setting the side recess up; heating cover.
- In the same skillet, cook onion slices until golden, about 8 minutes, flipping occasionally.
- Meanwhile, combine half an avocado with garlic and the remaining ½ teaspoon salt and pepper; Mash until smooth.
- With a spoon, put the onions and roasted peppers in the cavities of the mushrooms and divide them evenly. Sprinkle the soft avocado/guacamole/guacamole green pea mixture on the bottom of each bread; Put a stuffed mushroom on top of each.
